Though absinth does contain the compound Thujone, studies showed that the levels found in the infused spirit are low enough to have no effects on humans, thus leading the way for its production. On a technical level, absinthe is a distilled spirit that is infused with the botancials, fennel, anise, and absinthum wormwood, the final lending to the name. As a high proof concentrate (typically 55-72% alcohol), it is meant to be served diluted, it is then the essential oils of the botanicals come out of solution and given absinthe its strong nose and flavor.
